After you read this post, you’ll want to make energy bites for dayzzz.
This recipe first appeared on the BestLaminate blog, but I wanted to repost an edited version here. It’s basically the version you make when you’re out of certain ingredients—but it’s just as delicious!
Cherry & Oat Gluten-Free Energy Bites
- 3/4 Cup gluten-free Oats (I use Bob’s Red Mill)
- 1 Tbsp. flax seeds
- 1/2 Cup almonds
- 1/2 Cup pecans
- 1/4 Cup walnuts
- 6 medjool dates, pits removed
- 2 Tbsp. raw honey
- 1/2 tsp. vanilla extract
- 3 drops, liquid stevia (don’t have liquid stevia? Add another 1/2 tsp. vanilla)
- 1/4 tsp. sea salt
- 1/4 Cup dried cherries (dried cranberries also taste delish—and are less expensive!)
Visit the BestLaminate blog for recipe instructions!
You’re not going to believe how tasty this healthy snack is—it reminds me of eating an oatmeal cookie! Enjoy!
