Lucky for us gluten-free folk, there are a lot of options out there when it comes to gluten-free panackes and waffles (which wasn’t the case a few years ago). In fact, gluten-free pancakes are so easy to find that my coworkers picked up the Glutino pour-pancakes for me when we had a work breakfast the other week – how sweet is that?!
With so many options out there now, you want to make sure you’re picking the gluten-free pancakes that will truly make your weekend morning taste magical. I’m happy to say that I was lucky enough to have Nicole’s Naturals Gluten-Free Waffle & Pancake Mix sent to me and it is HANDS DOWN the tastiest gluten-free pancake I have had to date. LITERALLY couldn’t stop eating the batter.
I whipped up the pancake batter, which was super easy. All you have to add is egg, milk or water, and melted butter. I cooked up a couple plain pancakes, which were delicious. I then decided to get extra fancy with it and add in Enjoy Life’s Semi-Sweet Chocolate Mega Chunks – – best breakfast decision ever.
I only made half of the Nicole’s batch so I’m super excited for the next time I break out the flapjack flipper. I should probably do it when I have a guest because having so many delicious pancakes to yourself is dangerous. Can’t stop, won’t stop.
