You may or may not have realized that I’m flirting with a plant-based diet. And when I say flirting, I mean I eat plant-based during the week when I prepare my own food—it’s a whole nother story when someone offers me free food that has meat involved (a.k.a. when my mom invites me over for dinner).
In this half-assed plant-based journey, I’ve tried some pretty bomb-ass recipes. If you turn to Pinterest like I do, you find a lot of vegan recipes involve chickpeas—I’ve realized it’s because they’re awesome. I’ve also learned that cauliflower is used as a chicken substitute and it totally works! So when I spotted a vegan recipe for tacos on Pinterest using both cauliflower and chickpeas, I had a feeling it would be a winner. I was right.
Check out the ingredients below and see if you’re ready to hop on the cauliflower taco train.
- 1 head cauliflower
- 1 ¼ Cup chickpeas
- Corn tortillas
- Lettuce or summer garden blend
- 1 tsp. cumin
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. salt
- 1 tsp. chili powder
- 1 tsp. brown sugar
- ½ tsp. smoked paprika
- ¼ tsp. black pepper
